Obiettivi formativi

L' insegnamento concorre agli obiettivi formativi del corso di Laurea Magistrale in Biologia dell’Ambiente, fornendo agli studenti i principi alla base della relazione tra ambiente e alimentazione umana. In particolare saranno analizzate le attività umane che producono inquinanti ambientali, l'interazione di questi con le piante di consumo alimentare, con gli alimenti in genere e le conseguenze per la salute umana. 

Le diverse tematiche saranno esaminate in un percorso dedicato agli effetti degli impatti antropici sul metabolismo e sul potere nutrizionale delle piante eduli

Lo studente dovrà essere in grado di:    

Comprendere quali sono le principali proprietà nutrizionali delle piante

▪   Comprendere i fattori ambientali che hanno effetto sulla qualità nutrizionale delle piante

▪   Acquisire le conoscenze sul metabolismo vegetale

▪   Discutere sull'impatto dei cambiamenti globali presenti e future e comprendere come possano influire sulla qualità nutrizionale delle piante

The teaching contributes to the educational purpose of the Master's Degree course in Environmental Biology, providing the main pillars on the relationship between the environment and food for human consumption. In particular, human activities that produce environmental pollutants, and their interaction with plants for food consumption, . 

The different topics will address the effects of anthropogenic impacts on the metabolism and nutritional properties of edible plants.

The student will be able to:

  • Understand what are the main nutritional properties of plants
  • Understand the environmental factors that affect the nutritional quality of plants
  • Acquire knowledge on plant metabolism
  • Discuss the impact of present and future global changes and understand how they can affect the nutritional quality of plants

Risultati dell'apprendimento attesi

CONOSCENZA E CAPACITA' DI COMPRENSIONE

Lo studente dovrà acquisire adeguate competenze che lo rendano capace di comprendere l'interazione tra l'ambiente e le piante come possibile origine di rischi per l’uomo attraverso la filiera alimentare, le modificazioni che l’ambiente esercita sulla qualità nutrizionale delle piante e riconoscere gli effetti/danni causati sulle piante da una condizione di stress. Lo studente acquisirà conoscenze adeguate relative ai metodi sperimentali impiegati nella ricerca della qualità nutrizionale delle piante. Il grado di formazione acquisito verrà valutato mediante esami orali.    

CAPACITA' DI APPLICARE CONOSCENZA E COMPRENSIONE

Lo studente sarà in grado di utilizzare le conoscenze acquisite in contesti multidisciplinari sfruttandole e contestualizzandole in ambiti più ampi della biologia dell’ambiente. 

AUTONOMIA DI GIUDIZIO

Lo studente sarà in grado di:

-rielaborare le conoscenze acquisite utilizzando sia le nozioni teoriche che quelle pratiche derivanti dall’insegnamento attraverso attività (discussioni in aula e attività di approfondimento) mirate a sviluppare capacità di analisi critica e di discussione sugli argomenti dell’insegnamento;

- contestualizzare le tematiche dell’insegnamento all’interno delle problematiche ambientali attuali;

- affrontare e interpretare molti degli aspetti che sono alla base di scelte alimentari sostenibili per l’uomo e per l’ambiente.

ABILITA' COMUNICATIVE

Lo studente svilupperà la capacità di comunicare i diversi aspetti caratterizzanti le tematiche scientifiche mediante i) l’interazione continua con il docente e ii) le attività di approfondimento. Durante la fase finale dell’insegnamento lo studente sarà chiamato a preparare una presentazione sintetica sotto forma seminariale riguardanti argomenti dell’insegnamento. In queste attività lo studente dovrà essere in grado di adottare un linguaggio appropriato ed approcci comunicative efficaci.

CAPACITA' DI APPRENDIMENTO

Lo studente sarà in grado di esercitare capacità autonome di apprendimento sia nell'utilizzo della letteratura scientifica che nello sviluppo del lavoro collegato alla prova finale. Lo studente acquisirà capacità autonome di apprendimento riguardanti le tematiche strettamente correlate e/o interconnesse con l’insegnamento tali da permettere l'inserimento in diversi percorsi professionali. Lo studente sarà in grado di raccogliere, organizzare e interpretare correttamente l’informazione ottenuta da fonti scientifiche sulla interazione ambiente-alimenti.

KNOWLEDGE AND UNDERSTANDING

Student will acquire adequate knowledge to understand the interaction between environment and plants through the food chain, the changes that the environment cause on the plant nutritional quality and recognize the effects /damage caused on plants by a stress condition. Student will able to evaluate the impact on ecosystem of the exploitation of a resource of animal origin. Student will acquire adequate knowledge about experimental methods used in the evaluation of nutritional quality of plants. The degree of training acquired will be assessed  through oral examinations.

APPLYING KNOWLEDGE AND UNDERSTANDING

Students will be able to use the knowledge acquired in a multidisciplinary approach contextualizing them in broader areas of environmental biology. 

AUTONOMY OF JUDGMENT

The student will be able to:

- process the knowledge acquired using both theoretical and practical information deriving from teaching through activities (classroom discussions and in-depth activities) aimed at developing critical analysis and discussion skills on teaching topics;

- contextualize teaching topics within current environmental issues;

- address and interpret many of the aspects that are the basis of sustainable food choices for humans and the environment.

COMMUNICATION SKILLS

The student will develop the ability to communicate the different aspects characterizing scientific topics through i) continuous interaction with the teacher and ii) in-depth activities. During the end of teaching, the student will be asked to prepare a synthetic presentation in the form of a seminar on teaching topics. In these activities the student must be able to adopt an appropriate language and effective communication approaches.

LEARNING SKILLS

The student will be able to exercise autonomous learning skills both in using scientific literature and in developing the work related to the final exam. The student will acquire autonomous learning skills on issues strictly related and /or interconnected with teaching, such as allowing insertion into different professional paths.

The student will be able to collect, organize and correctly interpret information obtained from scientific sources on the environment-food interaction.

Introduzione sulle proprietà nutrizionali delle piante ed il loro apporrto in termini nutrienti essenziali. Descrizione dei diversi composti metabolici delle piante utili alla dieta umana e animale, con particolare riferimeno ai processi metabolici di biosintesi. Alterazione della proprietà nutrizionali delle piante in funzione dei cambiamenti ambientali, con particolare riferimento agli stress di natura abiotica (ad esempio, siccità ed elevate concentrazioni di CO2) ed alla presenza nell’ambiente di microplastiche e nanoplastiche. Ricerca di nuove colture resilienti ai cambiamenti climatici. Introduzione e definizione di wild food plants, e approfondimento delle loro proprietà nutrizionali.

Introduction on the nutritional properties of plants and their contribution 
in terms of essential nutrients. Description of the different metabolic compounds
of plants useful for human and animal diets, with particular reference to the metabolic
processes of biosynthesis. Alteration of the nutritional properties of plants as a
function of environmental changes, with particular reference to abiotic stresses
(for example, drought and high concentrations of CO2) and the presence in the
environment of microplastics and nanoplastics.
Search for new crops resilient to climate change.

Modalità di insegnamento

Le lezioni (16 ore, 2 CFU per modulo) saranno svolte in presenza, secondo il calendario prestabilito dal Corso di Laurea. La modalità a distanza (in streaming) potrà essere introdotta su indicazione dell'Ateneo in base alle misure sanitarie relative allo sviluppo della pandemia di COVID-19. Eventuali variazioni saranno comunicate dal docente compatibilmente con il tipo di attività, la numerosità degli studenti e le disposizioni di carattere sanitario. L’intero corso sarà gestito su piattaforma moodle che accoglierà: materiale delle lezioni e materiali didattici di approfondimento.

The lessons (16 hours, 2 CFU ) will be delivered in presence, according to the schedule established by th Degrre Course. Alternative online teaching (by streaming) may be introduced according to the University recommendations related to the status of the COVID-19 pandemic. Any changes will be communicated by the teacher compatibly with the type of activity, the number of students and the health provisions.The course will be managed on the moodle platform that will contain: lecture materialand in depht didactic materials.

Modalità di verifica dell'apprendimento

L'apprendimento sarà verificato attraverso un esame orale costituito sul programma svolto. Lo scopo è di valutare le capacità critiche, rielaborative e comunicative degli studenti sulle tematiche inerenti al corso e l’apprendimento dei concetti presentati durante il corso. La prova d'esame potrà essere svolta a distanza, tramite collegamento video, nei casi e nelle modalità raccomandate dall'Ateneo in base alle misure sanitarie relative allo sviluppo della pandemia di COVID-19.

Learning will be verified through an oral exam. The aim is to evaluate the students' critical, reworking and communicative skills on the topics inherent to the course and the learning of the concepts presented during the course. Remote examinations may be introduced according to the University recommendations related to the status of the COVID-19 pandemic.
